Beetroot and Cauliflower Dip
4 raw beetroots, peeled and chopped into large chunks
Half a head of cauliflower
Whole head of garlic
3 tablespoon rapeseed oil
4 tablespoon of tomato paste
3 teaspoon cumin
3 teaspoon coriander
Salt and pepper
Preheat oven to 160°c / 325°F / Gas mark 3
Place beetroot, cauliflower and garlic on an oven tray and drizzle with oil.Bake for approximately 45 minutes until tender. Remove from the oven and whizz in a processor or with a hand blender.
Add tomato paste, cumin, coriander, salt and pepper and blend again till smooth.
