BROCCOLI AND OLIVE SALAD

 

Ingredients

  • 1 large head of broccoli chopped into florets

  • 1 avocado, stoned and peeled

  • 2 peeled garlic cloves

  • Juice of half a lemon

  • 1 sprig of rosemary, finely chopped

  • ½ a cup of pitted olives

 

 

 

Method

  • Steam broccoli under warm, but still firm and green.

  • Using a food processor or a pestle and mortar blend the avocado with the garlic, lemon juice with some salt and pepper until smooth.

  • Combine the broccoli with the avocado until well combined.

  • Sprinkle the dish with the rosemary and the olives and serve.
