Courgette Slice






  • 5 eggs

  • 150g white spelt flour, sifted

  • 1 teaspoon baking powder

  • 375g grated courgettes

  • 1 large onion finely chopped

  • Optional: 200g of prosciutto or smoked salmon

  • 1 cup of crumbled feta cheese

  • 1 tablespoon of extra virgin olive oil



  • Preheat oven to 170°C

  • Grease and line a 30 x 20cm baking dish.

  • Beat the eggs in a large bowl.

  • Add the flour and beat until smooth.

  • Add courgettes, onion, bacon, cheese and oil and stir to combine.

  • Pour into prepared pan.

  • Bake in oven for 30 minutes or until cooked through.

  • Cut into slices and serve hot or cold.
