Sugar Free Fruit Cake
250 g pitted dates
200ml boiling water
500g unsweetened dried fruit
50ml port (or tea)
2 teaspoon mixed spice
1 cup coconut oil
300g spelt flour
3 tablespoon milk
2 teaspoon baking powder
1/2 teaspoon bicarb powder
Soak the dried fruit in the port for at least 1 hour prior.
Preheat the oven to 180 degrees. Grease and line a cake tin.
Place the dates in a heatproof jug, and cover with the boiling water. Leave the dates to soak for 10 minutes and then puree the dates and water into a paste.
In one bowl melt the coconut oil until liquid, and combine with the eggs, milk and date paste. In a separate bowl combine the mixed spice, flour, baking powder, bicarb and salt.
Combine the liquid bowl with the dry ingredients, and stir until combined. Mix through the dried fruit.
Pour the mixture into the prepared tin.
Place in the oven for around 45 minute until a knife comes out clean.
Leave to cool.
