Quinoa and Kale Patties

  • 2 ½ up cooked quinoa, cooled

  • 40g parmesan, grated

  • 1 clove garlic, crushed

  • ½ cup spring onions

  • ½ cup spinach or kale finely chopped

  • ½ cup basil finely chopped

  • 60 g fresh bread crumbs

  • 4 eggs, beaten

  • Salt and pepper to taste

 

Combine all of the ingredients together. In a large frypan, heat some oil and then place large

spoonfuls of the mixture into the oil, and flatten them into a pattie shape with a spatula.

 

Cook until lightly brown, and flip, then brown the otherside lightly.
