1 large head of broccoli chopped into florets
1 avocado, stoned and peeled
2 peeled garlic cloves
Juice of half a lemon
1 sprig of rosemary, finely chopped
½ a cup of pitted olives
Steam broccoli under warm, but still firm and green.
Using a food processor or a pestle and mortar blend the avocado with the garlic, lemon juice with some salt and pepper until smooth.
Combine the broccoli with the avocado until well combined.
Sprinkle the dish with the rosemary and the olives and serve.
