Goji Anzac Biscuits

Ingredients:

 

125g spelt flour

100g desiccated coconut

50g goji berries

100g rolled oats 

pinch salt

125g unsalted butter

85g raw honey 

1/2 teaspoon bicarb of soda 

 

 


Method:

 

Preheat oven to 180°c. Line a baking tray with greaseproof paper. 

Mix the flour, coconut, goji berries, oats and salt in a large bowl. Melt the honey and butter together in  small pan. Mix the bicarb, with two tablespoons of boiling water, add to the dry ingredients as well as the butter mixture and stir together.

Using your hands roll the mixture into small balls and place on the baking tray, leaving space between each one. Flatten slightly with the back on the fork. Bake in the oven for around 15 minutes until golden
