This granola is our 'go to' breakfast, its so tasty and SO full of delicious health boosting ingredients that it makes us happy to get out of bed.....sometimes!
1 cup uncooked quinoa
2 cup organic oats
2 tablespoon rapeseed oil or melted coconut oil
1 tablespoon coldpressed honey
1/4 cup chopped pecans or walnuts
1/4 cup goji berries
1/4 cup ground flaxseed
2 tablespoon desiccated coconut
1 teaspoon ground cinnamon
In a bowl mix together the quinoa and oats, add the honey and oil and mix together.
Spread the mixture on a lined baking tray in a thin layer and toast in the oven at 160°c and bake for 20 minutes. Keep an eye on your toasting though, as the mixture does have a tendancy to burn in the blink of an eye!
Remove the oats and quinoa and from oven and leave to cool, return the mixture to a bowl and add the rest of the ingredients. Stir well and keep in a airtight container. Serve with cold milk and some fresh fruit.
