Quinoa Ginger Nut Bites

1 cup of dates

½ cup pecans

½ cup cooked and cooled quinoa*

1 tablespoon goji berries

1 teaspoon ground ginger

OPTIONAL 1 teaspoon cold pressed honey



Soak dates for a few hours before hand to soften them slightly, simply place in a bowl and cover with water, when ready to bake just strain off the water. Cook quinoa and leave to cool.




Preheat oven to 160°c .

Combine all ingredients in a food processor until a loose dough is formed.

Wet your hands and roll small spoonful’s into balls and squash down with a fork.

Place onto a lined baking tray and bake for 10 minutes until slightly toasted
