140g white spelt flour
140g wholemeal spelt flour
2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1 teaspoon vanilla bean paste or extract
1 tablespoon honey
2/3 cup milk
1 cup dried fruit
1/2 cup oats
Preheat the oven to 160 degrees. Line a baking tray with baking paper.
Using your hands, combine the butter with the flour, baking powder, cinnamon and salt, rub it lightly until in resembles breadcrumbs.
In a separate bowl combine the beaten egg with the honey, vanilla and milk.
Gently mix the liquid into the flour mixture, and then add the fruit.
Put half of the oats on a clean dry surface, and turn out your scone mixture, add the remainder of the oats to the top and then pat it down to form a dough about ½ high. Either cut into shapes using a kniffe or use a cutter to make your scones.
Bake in the oven for 15 minutes until golden brown.
